Meet Sam
G’day, I am an Australian Food and Beverage Director who now calls Southie home. Over the past 10 years I’ve worked my way from the kitchens of Europe to the galleys of some amazing yachts in the Caribbean and beyond. I couldn’t think of a better time and place to bring Aussie food and a few personal favourites to the people of Boston!
KO? What does it stand for?
It stands for 2 things in my mind. The first is the Knock Out. Being that the food will put to rest your hunger as well as change your perception of what a meal from Australia is. Second is more playful and something that I wanted us Aussies to have a laugh at. It stands for ‘Ken Oath’ which is Aussie slang for reaffirming your admiration for something, including how much you may have liked your meal.
What were you before you opened KO?
I worked as a chef on private luxury yachts. Always on the move when I am working.
What is your first memory of food?
That would have to be Sunday roast at my Nana’s place. It was a rotating selection of Chicken, Lamb and Pork with all the trimmings, bread and butter or chocolate pudding and on special occasions these little shortcrust mushrooms that were filled with strawberry jam, whipped cream and a dusting of spice. It was always a highlight of my childhood and something I think of more and more as I get older.
What is your favorite dish on the menu?
Always the toughest bloody question! Probably the Irish stew meat pie. It is what really got me motivated to get this business up and running. It’s what I hope will have all those people who have eaten something similar whether on travels to Aussie or perhaps those with memories of something similar from Irish relatives coming over for.
What is the one Aussie dish you would never eat or make?
For something I would never eat it has to be devon. If anyone has ever tried it you will know what I mean. If you have never had it then take my word. For something I would never make it would probably be Nana’s mushrooms. I have no chance of ever replicating those.
